Our Story
The Parlour started with a simple conviction: that a small Montana town deserves bread that takes its time. No shortcuts. No industrial proofers. Just flour, water, salt, and the kind of patience that turns ingredients into something worth sharing.
Today, every loaf, every pastry, and every item on our shelves carries that same standard. We source from local mills and ranchers whenever we can, and we bake in small batches so nothing leaves our kitchen that doesn't meet our table.
Our Process
We partner with regional mills for stone-ground flours and source dairy, eggs, and produce from Montana ranchers and farms.
Our sourdough starter — kept alive for years — drives a slow cold ferment that develops flavor no faster method can match.
Each loaf is hand-shaped on the morning of baking. No moulds, no machines — just technique and feel.
Deck ovens at peak heat. Steam injected for crust. We pull each loaf the moment it hits the colour and sound we're looking for.
